harvested peppers
hey all-
i just harvested a bunch of banana peppers, a couple of jalepenos, and one (but soon to be very many) habeneros. so what do i do to keep them fresh until i eat/cook w/ them? do i put them in a zip-lock in the fridge? plastic container in/out of the fridge? help???? thanks, marty. ________________________________________ Making the World a Noisier Place |

They won't stay fresh very long---just a few days. I think a zippy bag in
the fridge would be your best bet. OR... Consider slicing and putting them in jars of 3 parts vinegar/1 part water and putting them in the fridge. They'll last a long time that way. Or, if you have a whole bunch, look into really canning them so they don't have to occupy the entire fridge. That's a LOT of work, though. If you have a vacuum sealer (or a friend with one!), chop or slice the peppers, vacuum and freeze them in small batches, and they will be perfect for making chili or even pico de gallo all winter.
