Default Saving Sunflower seeds

I save a couple of the best heads - and dried them out.

I have just come to removes the seeds (for sowing this year) - but
there was nothing in the cases.

I assume that they had not been fertilised.

Is that correct - what can one do to get good seeds from the flowers.
