We have ground elder. After 5 years of proper weeding it's no more than
an irritant. (maybe it doesn't like clay much?)

Having read all of these contributions, because your mint has encroached
into other plants, the only way is for you to follow each stem with a trowel
and keep removing the roots bit by bit. Tedious I know but apart from
digging everything up and starting again there is no other way.
