Anyone know where to buy those water gel crystal things in large
quantities, as opposed to the little sachets in garden centres ?

Find a delicatessen. Very often their perishable supplies are sent in
lightly insulated boxes with strips of pockets of a similar stuff -
might even be exactly the same, hydrated and frozen down to a low
temperature.

They only throw the stuff away. Last year I tried some and it worked
just like the gardening stuff. It can't be toxic or they wouldn't be
allowed to use it with food.
