Default chives, cavolo nero

Should my chives be "dead-headed" now they are flowering?

I'm trying cavolo nero this year, any tips appreciated, like does
it need bird protection?

I leave them on - they look great and they'll ensure you have a plot
full of chives anywhere near to where they're growing next year. And
probably this year as well - they tend to come 2 or 3 times.

Iirc you can eat the flowers as well?
