The red elderberries and gold elderberries are inedible (but,
ornamental and shade-tolerant). The American and black elderberry
(native to Europe) are edible. Blue elderberries (native to Pacific
Northwest) are OK in wine and preserves.

Technically, these are different species, rather than varieties.
