I'm no expert but I use the 2 and 6 rule. In the sixth month (June) you
prune side shoots to 6 leaves and in the second month (February) you prune
back further to 2 leaves. That is for an established wisteria which is
flowering. Until then I think you can prune whenever you feel like it to get
the form right.
