Default Gluten-free alternatice to Soy?

Quite a lot of soy does not contain gluten. See
http://www.gastro.net.au/diets/glutenfree.html -- if the soy doesn't
list wheat as an ingredient, you should be OK.

So, my suggestion is that you substitute gluten-free soy sauce. ;-)
