Default Eating and rooting a mint plant

I bought a bunch of cut mint before Christmas and didn't use it all.
I stuck it in water, looking very sad. It now has good roots and is
growing new shoots. Just take off leaves at the bottom and put it in
a jar of water.
If they're long enough you could cut off the tops and root those too.
