Default [IBC] Prunus

I have a nice trunk that was labeled prunus mume
bonsai when I bought it. It has lovely double
flowers. The branching is crappy. I remember way
back in the beginning I cut this plant back and
developed new branches. Living in California, I think
perhaps Zone 9, Sunset 15, I don't always see complete
dormancy in this tree. Right now I have fat flower
buds. I would sacrifice flowers this year if I could
have nicer branching. The thing also needs repotting.
It is bare root season here. Any Ideas?
