Default Chem. Assays of Spec. Fruit and Veg. Cultivars Needed

Hi. Would anyone know of a database of chemical assays for specific
fruit and vegetable cultivars ? (in their ripe and harvested state).
The values I am most interested in are pH as well as the breakdown
into specific acids and the specific sugars and starches present.
