Default pruning antique rose

I planted a 'robin hood' antique rose last year, just north of San Antonio. It grew one long stem that I trained to a trellis. Should I prune that back right now, in dormancy, or will it bloom from this 'old wood'. I can never remember what blooms on old wood and what blooms on new wood. Thanks.
