I stick them in boiling water for 4 mins, take their skins off and
freeze them small freezer bags (400g at a time) for use in chilllis,
casseroles etc


I cut them in half with skins on, open freeze, then use them for
grilling.



I did similar with last year's glut.
The things are a little sparse this year and I am now wondering whether it
will still be safe to resurrect the "hoard" for soups etc.
