Mushrooms grow fast; they come up overnight and in the morning are at
the unopened button stage. They are clean, white, fresh, need no
peeling, and taste and cook better (imho). The older, open ones tend to
shrink and bleed juice more in the frying pan; or if you're making soup,
they make it unattractively dark.

If you pick the very big open ones, the top has a skin that needs to be
peeled off,

I don't.

the gills are very dark,

That's true but that's not important.

the texture is a bit rubbery

I disagree.

and
the flavour isn't as good.

I think the flavour is far better. There IS a flavour in older mushrooms and
very little in new ones.

Whenever I've gone mushroom picking it's always been at dawn or dusk. Their
little white caps jump out at you in the twilight, and they are much easier
to see against the grass than during the day.

The occurrences both before and after your semicolon are highly desirable.

Yes. What's wrong with that?

No.

You and I are clearly familiar with very different kinds of mushroom. To
me, the small, unopened button mushrooms have no flavour worth talking
about, and large, open field mushrooms or boletus make heavenly slobbery
omelettes.

Why do people collect mushrooms early in the morning?

The message
from (Larry Stoter) contains these words:

Generally though, mushrooms first emerge overnight and, as has been
mentioned, if you aren't first, you won't get any. Although, several
varieties - parasol, cep - can take several days to mature. If you're
sure nobody else is going to grab them, it is usually best to wait.

Old wives' tale. All mushrooms emerge over a period and can take many
days to get to a noticeable size.

What is fairly rapid is the opening of the cap, especially as a result
of a warm night followed by a heavy dew, allowing the fungus to absorb
and use water quickly.

Then you find a wide cap because it's visible from a distance, and
discover lots of smaller ones nearby. But overnight it isn't.

They take weeks to reach that stage.

They are clean, white, fresh, need no
peeling, and taste and cook better (imho).

No mushroom needs peeling - most of the flavour is in and just beneath
the top of the cap. And BTW, the flavours in fungi are mainly
oil-soluble, largely released by cooking with some fat or oil.

The older, open ones tend to
shrink and bleed juice more in the frying pan; or if you're making soup,
they make it unattractively dark.

The unattractiveness is a matter of opinion.

If you pick the very big open ones, the top has a skin that needs to be
peeled off, the gills are very dark, the texture is a bit rubbery and
the flavour isn't as good.

I would dispute all of these statements apart from the colour of the
gills. IMO the flavour is far and away better than the immature
specimens.

There is a patch of field mushrooms at my workplace. Each year I pick
them and each year I have to balance size against probability of maggot
infestation. You see, as Jacko Alltrades says, they take some days from
first appearing as dots to maturing into huge caps, meanwhile the flies
are busily laying their eggs all over them. The trick is to allow the
'shrooms to expand sufficiently to gain flavour (little flavour in
peedie ones) but not allow time for the fly eggs to develop into
burrowing maggots.

I suggest that the early morning picking idea is to take them when very
young before flies have a chance to damage them. Alas, if one does that
one inevitably sacrifices flavour and weight.
