Default sprouting brocolli

Hi everyone,
My purple sprouting brocolli was stripped to the bear stalks by caterpillars over the summer but is now beginning to sprout again. i've never tried to grow this vegetable before and would welcome advice on how to treat it over the winter and what to expect in the spring in order to maximise its potential to produce edible sprouting florets. thanks
