What is the botanical/biological term for that?

Are you thinking of monocarpic or semelparous or hapaxanthic? Like Bambusa
or Agave?

Monocarpic is the term usually used for plants; semelparous for animals
(e.g., salmon); hapaxanthic is usually used for palms and bamboos.
