Default What's the word for fruits which stop ripening when picked?

There's a word which means "continues ripening after being picked", and
there's another word which means "stops ripening after being picked".
What are those words? And how would I find them other than by asking
here?

And in the end, they lost it all - freedom, comfort and security.
