Hi,

Can Leylandii be grown as a box shaped hedge roughly 2.5m above ground
?

In theory, yes. However it grows so fast that it would be hard work to keep
it in check.

You'd be better off with a slower growing hedge plant. Beech would fit the
bill, or a slower growing conifer if you need evergreen.
