Default Hydrangea with flowers that stay white

I have a white hydrangea however the flowers gradually turn pink. Is there
a variety that stays white? I have seem Madame Emille advertised, will this
remain white?

I always thought you could affect the colour of hydrangea by altering the
acidity of the soil, but this may be urban legend.
