How do I tell which is up?

A couple of the roots have nothing to indicate which side they are going to
grow from.

Does it matter if they get put in upside down?

You should discard the middle and use the sattelite growth.

...............Alan there is a lot on rhubarbinfo, also that the cold triggers spring growth.So.. wouldn't the freezer bit throw it off season.
