I've dug out some rhubarb which was not in a very convenient position, cut
the
roots in half, put them in the freezer for a couple of days, now have a
better
position to replant them.

How do I tell which is up?

A couple of the roots have nothing to indicate which side they are going to
grow from.

Does it matter if they get put in upside down?
