I gotta ask.
How *do* they 'harvest' it?

When in doubt, go to the website!
Not only can you get Coyote urine but Fox, Bobcat, Wolf and Mt. Lion (!!!)
Website says "All urines are collected naturally from domestically
raised animals on farms that are controlled by appropriate state and federal
agencies"

I can't imagine naturally collecting a urine sample from a Mt. Lion. Mt. Lions
occasionally eat people in our area of the country.
