Here is my Mother's recipe for Runner Bean Chutney:-

2lbs Runner Beans - when trimmed and sliced
1½ lbs Onions - when chopped
1 lb Demerara Sugar
1 lb Soft Brown Sugar
1 heaped Tbsp Cornflour
1 heaped Tbsp Turmeric
1 heaped Tbsp Dry Mustard
1½ pints Vinegar

Cook the sliced Beans in well Salted Water.

Cook the chopped Onions in the ½ pint if the Vinegar.

Strain the cooked Beans and add to the Onions with the
rest of the Vinegar and cook for 10 minutes.

Add the Sugar and the rest of the Ingredients and boil for
30 minutes until the Vinegar has evaporated.

Bottle in sterilized jars and cover.

This is bizarre. Ours are beginning to come to an end - what a strangely
convoluted sentence that is! But they're in a greenhouse which is warmer
than the others.

Shirley are ripening well (outside), as are Garden Pearl (also outside).
Tumbling Tom are not ripening yet, nor are the 'black' tomatoes, whose
name escapes me ATM.

Rosie agrees - as far as she can remember it was malt vinegar.

Good. Spirit vinegar is naff. If you need spiced vinegar, always buy
pickling (malt) vinegar to make it from: ordinary malt vinegar isn't so
strong, and pickles can go 'off' if condiment-strength is used.

ours went in lateish but went into a greenhouse and grew like the
clappers but have ripened about a month late. Dublin weather was dire
all "Summer".
