Default Elderflower cordial recipe

Ophelia asked me to post it so:
ELDERFLOWER CORDIAL


90 heads of Elder flower, picked at mid-day

6 sliced lemons

9lbs. Preserving sugar (Caster will do but Preserving is better)

7.5 oz. Citric or Tartaric acid

Put all the ingredients into a large bowl or clean plastic bucket. Add 7.5
pints boiling water.

Stir night and day for 5 days. Strain, squeezing the lemons. Put into
plastic bottles and deep freeze. Take out only when wanted, and refrigerate
as it wonıt keep out of the freezer for more than 5 to 7 days.

Dilute with water to taste.

This makes a very refreshing drink in hot weater.

Undiluted, itıs also good on gooseberries or over fruit salad.

Groan,... groan and moan... My husband keeps on asking about this,
please Sacha, can you 'phone him, I am up to "here" with elderflower
cordial. He also says can you tell him about ice cream? I have to go
to bed, over to you and him. For years,a flipping lifetime, he goes
on about elderflower stuff, right? over to you?

LOL!! It's so easy to make but needs to be somewhere it doesn't stink the
house out - in the 'stewing' stage it's quite reminiscent of cat's pee! I
was given that recipe by a friend and find it's the best I've tried but not
everyone goes in for the 5 day steeping thing.

NB don't forget to give the elderflowers a good shake first as they can be
full of little black insects


One good reason for straining it. ;-)) Otherwise, just think of it as
'flavour enhanced'!

Hm! Rather like Retsina, OK drinking it ice cold in a Greek taverna, but....
Regarding Elderflower cordial, why not make a gallon or two of Elderflower
wine? When made correctly, it is the queen of country wines and you don't
need to store the wine for a year or two before drinking. Just the job for a
summer salad lunch or even dinner.

Regarding Elderflower cordial, why not make a gallon or two of
Elderflower wine? When made correctly, it is the queen of country
wines and you don't need to store the wine for a year or two before

It was one reason I posted the link Elderflower wine, the other is
that the wine will keep longer than the cordial, if you can avoid
drinking it all quick.

made that? Does anyone have a recipe?

Yes, I have made Elderflower champagne and have a good recipe.
If you're interested, e-mail me omitting 'nospam'. Remember, you must use
genuine champagne bottles, plastic stoppers and wire cages.
When I first started making Elderflower champagne, I used ordinary wine
bottles not realizing what devastation an exploding wine bottle can cause.

Go on then, why "preserving" sugar? Do you need the pectin? Can't see why,
but am open to learn.

And why caster instead of ordinary sugar? The only difference between
castor and normal is the granule size. Is it really worth paying all that
extra for a quicker dissolve?
